  • 1 organic zucchini chopped
  • 2 cups organic spinach or mixed greens if frozen then defrost and strain
  • 1 Tbsp cooking oil coconut, avocado, olive, grapeseed
  • 1 cup Socca batter
  • Optional: sun-dried tomatoes mushrooms, onions

Directions

  • In a cast iron sauté pan, add oil and at medium heat begin to stir-fry vegetables.
  • Once they are well-sauteed, add in the Socca mix. Continue to cook as if you were making an omlette.
  • Flip once or twice to get even sided cooking for the Socca batter.
  • Remove from heat and enjoy.
