The Socca Scramble

- 1 organic zucchini chopped
- 2 cups organic spinach or mixed greens if frozen then defrost and strain
- 1 Tbsp cooking oil coconut, avocado, olive, grapeseed
- 1 cup Socca batter
- Optional: sun-dried tomatoes mushrooms, onions

Directions
- In a cast iron sauté pan, add oil and at medium heat begin to stir-fry vegetables.
- Once they are well-sauteed, add in the Socca mix. Continue to cook as if you were making an omlette.
- Flip once or twice to get even sided cooking for the Socca batter.
- Remove from heat and enjoy.
