Mixed Berry & Bran Fruit Crisp
Ingredients
For the crisp:
- 3 cups 750ml frozen mixed berries (I used blueberries and raspberries)
- 1 tbsp 15ml cornstarch
- 3 tbsp 45ml sugar ½ cup (125ml) SmartBran Cereal
- ¼ cup 60ml flour ½ cup (125ml) Old Fashioned Oats
- ⅓ cup 80ml melted vegan butter
For the coconut whip:
- 14 fl. oz 414 ml can of high quality coconut cream, chilled overnight
- 2 tbsp berry sugar
- Flaked coconut to serve
Instructions
For the crisp:
- Preheat oven to 350°F. Line a loaf pan with parchment paper.
- Layer berries into the pan. Sprinkle evenly with sugar and cornstarch.
- In a bowl, combine SmartBran Cereal, sugar, flours, old fashioned oats, and vegan butter. Stir well until the mixture sticks together a little bit. Top the previously sprinkled berries evenly with the crumble mixture.
- Bake for 40 minutes or until the topping appears lightly golden-brown.
- Serve with coconut whip (directions below) and flaked coconut.
For the coconut whip:
- Open chilled coconut cream and scoop out the thickest portion. Discard or save the remaining coconut water for smoothies.
- Beat the thick coconut cream with 2 tbsp berry sugar. Beat on high speed until coconut cream is thick and airy.
- Chill until needed.
