3cups750ml frozen mixed berries (I used blueberries and raspberries)
1tbsp15ml cornstarch
3tbsp45ml sugar ½ cup (125ml) SmartBran Cereal
¼cup60ml flour ½ cup (125ml) Old Fashioned Oats
⅓cup80ml melted vegan butter
For the coconut whip:
14fl. oz414 ml can of high quality coconut cream, chilled overnight
2tbspberry sugar
Flaked coconutto serve
Instructions
For the crisp:
Preheat oven to 350°F. Line a loaf pan with parchment paper.
Layer berries into the pan. Sprinkle evenly with sugar and cornstarch.
In a bowl, combine SmartBran Cereal, sugar, flours, old fashioned oats, and vegan butter. Stir well until the mixture sticks together a little bit. Top the previously sprinkled berries evenly with the crumble mixture.
Bake for 40 minutes or until the topping appears lightly golden-brown.
Serve with coconut whip (directions below) and flaked coconut.
For the coconut whip:
Open chilled coconut cream and scoop out the thickest portion. Discard or save the remaining coconut water for smoothies.
Beat the thick coconut cream with 2 tbsp berry sugar. Beat on high speed until coconut cream is thick and airy.
Chill until needed.
