Spinach and Ricotta Protein Calzone

  • 3/4 cup water
  • 1 package active dry yeast or 2 grams
  • 3 cups all-purpose flour
  • 1/4 teaspoon salt
  • 4 scoops tera’swhey plain protein powder
  • 10 ounces fresh spinach
  • 16 ounces Ricotta cheese
  • 1 cup mozzarella cheese
  • 1/2 cup parmesan cheese
  • 8 ounces tomato sauce 16 ounces total for dipping sauce
  • pinch of salt and pepper

Directions

  • Add warm water to mixing bowl.
  • Add yeast. Set aside for 5 minutes.
  • Mix well with a whisk or fork.
  • Add flour, salt and whey protein powder. Stir well.
  • Let the dough rise for 20 minutes (or wrap in plastic wrap and store in the refrigerator overnight.)
  • Separate into 8 pieces and roll out into flat, circular layers. Set aside.
  • Dice spinach and place into a large mixing bowl.
  • Add ricotta, parmesan and mozzarella cheese. Mix well. (Optional: add one tablespoon tomato sauce to the middle of the dough circle.)
  • Place two large tablespoons of spinach and ricotta mixture on in the middle of the dough.
  • Sprinkle with a pinch of salt and pepper.
  • Pull one half of the dough over the other side until the edges are aligned.
  • Press the two sides of dough together with your fingertips.
  • Once the sides are pressed together, carefully fold the dough over on itself to make a crust.
  • Brush an egg white over the dough before placing it in the oven.
  • Grease pan and bake at 350 degrees for 25 minutes, or until golden brown.
  • Remove and let cool for a minimum of 5 minutes before eating.
  • Serve immediately or store in an airtight container in the refrigerator.
