  • 1 Spanish onion diced
  • 1 clove garlic minced
  • 1 Cup crushed tomato
  • 1 large carrot diced
  • 4 Cups cooked chickpeas
  • ½ tsp. sea salt
  • pinch ground black pepper
  • 2 tsp. curry powder
  • ¼ tsp. smoked paprika
  • 4 Cups vegetable stock or water
  • 1 Tbsp. olive oil

Directions

  • In a medium pot, sautée onion & garlic in olive oil on medium heat 3-4 minutes.
  • Add remaining ingredients and stir. Bring to a boil,stirring occasionally. Lower to a simmer and cook, stirring occasionally, 20-30 minutes.
