  • 3 red skin potatoes scrubbed, quartered, w/skin
  • 3 tbsp coconut oil
  • 3 leaves & stems of cilantro or other fresh herb
  • 1/2 sweet potato scrubbed, cubed, w/skin
  • 1/2 red onion cubed

Directions

  • Preheat oven to 425F.
  • Spread 2 Tbsp coconut oil in the pan.
  • Arrange veggies, top with herb & remaining coconut oil can spread / drizzle (if warmed by placing near preheating oven) on top.
  • Bake for 25-30 minutes, stirring every 10 minutes, until desired golden / roasted look & texture.
