  • 1 lb red skin potatoes scrubbed, quartered, w/skin
  • 2 Tbsp avocado oil
  • 3 leaves & stems of cilantro or other fresh herb
  • 1 medium sweet potato scrubbed, cubed, w/skin
  • 1 red onion cubed

Directions

  • Preheat oven to 425F.
  • Line a cooking sheet with parchment paper for easy clean up, transfer all your chopped veggies to it.
  • Drizzle avocado oil over, sprinkle with salt, pepper and any herbs you wish (rosemary/garlic is fabulous!) and use your best kitchen tool- your hands, to gently turn and coat all the veggies in the oil/seasonings. Then arrange the veggies, trying to get one flat cut side down on the sheet so they brown nicely.
  • Bake for 25-30 minutes, until desired golden / roasted look & texture.
  • Store cooled leftovers in a glass container in your fridge.
