Line a cooking sheet with parchment paper for easy clean up, transfer all your chopped veggies to it.
Drizzle avocado oil over, sprinkle with salt, pepper and any herbs you wish (rosemary/garlic is fabulous!) and use your best kitchen tool- your hands, to gently turn and coat all the veggies in the oil/seasonings. Then arrange the veggies, trying to get one flat cut side down on the sheet so they brown nicely.
Bake for 25-30 minutes, until desired golden / roasted look & texture.
Store cooled leftovers in a glass container in your fridge.
