Twice Baked Yams

I love these for two reasons – the nutrition and the sweet taste. This carb is a great accompaniment to a burger in a bowl or a plate of roasted veggies tossed with hemp seeds.   • 4 small garnet yams fist-sized
  • 1 tablespoon coconut oil
  • 1 tablespoon grated ginger
  • 4 scallions sliced thinly
  • 1 teaspoon sea salt

Directions

  • Preheat oven to 350 degrees.
  • Rub the outside of each yam with oil and add to a sheet pan. Roast for 45 minutes or until a toothpick can be pierced through the yam with no resistance. Set aside to cool.
  • Once cool enough to handle, cut a slit into the top of the yam and carefully scoop out all the flesh of the yam into a bowl.
  • Mash the yam with the sea salt and grated ginger. Add back to the yam skins and bake for another 10 minutes.
  • Top with sliced scallions.

Notes

Note: Garnet yams have a deep red skin and orange flesh. Sweet potatoes have a blond skin and interior. Sweet potatoes are more starchy than sweet.
