I love these for two reasons – the nutrition and the sweet taste. This carb is a great accompaniment to a burger in a bowl or a plate of roasted veggies tossed with hemp seeds. Rub the outside of each yam with oil and add to a sheet pan. Roast for 45 minutes or until a toothpick can be pierced through the yam with no resistance. Set aside to cool.
Once cool enough to handle, cut a slit into the top of the yam and carefully scoop out all the flesh of the yam into a bowl.
Mash the yam with the sea salt and grated ginger. Add back to the yam skins and bake for another 10 minutes.
Top with sliced scallions.

Note: Garnet yams have a deep red skin and orange flesh. Sweet potatoes have a blond skin and interior. Sweet potatoes are more starchy than sweet.
