  • 2 large parsnips sliced 1-inch thick
  • 3 cloves garlic
  • 1 Tbsp olive oil
  • 1 Tbsp. coconut oil
  • ¼ tsp. sea salt
  • Pinch ground black pepper
  • Pinch red chili flakes

  • Preheat oven to 400º
  • Toss all ingredients in a bowl to coat. Spread on rimmed baking sheet. Cover with foil.
  • Roast at 400º 35 minutes, until tender.
  • Pulse in food processor or mash by hand.
