Ingredients
  

  • 1 Cup Coconut Flour
  • 1 Cup Almond Flour
  • 1 Cup Coconut Sugar
  • 2 Eggs
  • 1/2 Cup Coconut Oil
  • 1.5 Cup Pumpkin Puree (1 can)
  • 1 Tsp Vanilla
  • 4 Scoops French Vanilla Promix vegan protein
  • 1 Tsp Salt
  • 1.5 Tsp Baking Powder
  • 2 Tsp Cinnamon
  • 1/2 Tsp Nutmeg
  • 1/2 Tsp All Spice
  • 1/2 Cup Dark Chocolate Chips

Instructions
 

  • Preheat oven to 350 F.
  • Line cookie sheets with parchment paper.
  • In a large bowl, mix all dry ingredients loosely
  • In a separate bowl, mix all wet ingredients together.
  • Transfer the wet mixture into the bowl with the dry mixture and combine until smooth.
  • Fold in the dark chocolate chips.
  • Using a scooper or two large soup spoons, take portions and mold into the size of a golf ball.
  • Flattening with the balls with your palm or the back of spoon before cooking will ensure even cooking.
  • Bake at 350 F for 15 minutes and then rotate (option to flip with spatula). Cook for an additional 15 min or until desired doneness.
  • Cool and refrigerate.
  • Note: they will fall apart when warm
