Pumpkin Protein Power Anytime Cookies
Ingredients
- 1 Cup Coconut Flour
- 1 Cup Almond Flour
- 1 Cup Coconut Sugar
- 2 Eggs
- 1/2 Cup Coconut Oil
- 1.5 Cup Pumpkin Puree (1 can)
- 1 Tsp Vanilla
- 4 Scoops French Vanilla Promix vegan protein
- 1 Tsp Salt
- 1.5 Tsp Baking Powder
- 2 Tsp Cinnamon
- 1/2 Tsp Nutmeg
- 1/2 Tsp All Spice
- 1/2 Cup Dark Chocolate Chips
Instructions
- Preheat oven to 350 F.
- Line cookie sheets with parchment paper.
- In a large bowl, mix all dry ingredients loosely
- In a separate bowl, mix all wet ingredients together.
- Transfer the wet mixture into the bowl with the dry mixture and combine until smooth.
- Fold in the dark chocolate chips.
- Using a scooper or two large soup spoons, take portions and mold into the size of a golf ball.
- Flattening with the balls with your palm or the back of spoon before cooking will ensure even cooking.
- Bake at 350 F for 15 minutes and then rotate (option to flip with spatula). Cook for an additional 15 min or until desired doneness.
- Cool and refrigerate.
- Note: they will fall apart when warm
