  • 1 Tbsp olive oil
  • 5 oz shallot minced
  • ½ Cup dry white wine
  • 8 oz golden potatoes diced
  • 2 sprigs fresh thyme
  • ½ tsp salt
  • pinch ground black pepper
  • 2 Cups vegetable stock
  • 1 Cup non-dairy cream
  • 8 oz oyster mushrooms

Directions

  • In medium pot, heat oil. Add shallot and 4 oz mushrooms, sautée.
  • Deglaze pot with wine.
  • Add potatoes, thyme, salt & pepper.
  • Cover with vegetable stock and bring to a low boil.
  • Reduce to a simmer and cook, stirring occasionally, until potatoes are tender.
  • Add cream and remaining mushrooms. Simmer until potatoes begin to break apart.
