Delicious Brussels Sprouts Waldorf Salad with a Healthy Twist

What you will need:

  • mayonnaise (or substitute with Greek yogurt or plant-based mayonnaise)
  • lemon juice
  • Dijon mustard
  • shallot
  • fresh tarragon
  • honey
  • salt
  • Brussels sprouts
  • crunchy apple
  • celery
  • walnuts
  • seedless red grapes
  • pomegranate seeds (optional)

Making the Salad

  2. Prep the Brussels Sprouts: Trim the ends of the Brussels sprouts and thinly slice them. You can use a sharp knife or a mandoline for even slices. Or if you are looking for even easier! Traders Joe’s and other stores have Brussel sprouts that are already sliced! Shh….we won’t tell anyone just how easy this makes this recipe.
  3. Cut the Fruit: When chopping the apples it can be helpful to rinse with water with lemon juice to keep them from browning.
  4. Combine Ingredients: In a large mixing bowl, combine the sliced Brussels sprouts, apple slices, chopped celery, toasted walnuts, and halved grapes. Toss gently to mix.
  5. Add the Dressing: Pour the prepared dressing over the salad and toss until all ingredients are evenly coated with the dressing.
  6. Garnish and Serve: If using, sprinkle pomegranate seeds over the top for an extra burst of color and antioxidants. Serve the Brussels Sprouts Waldorf Salad immediately, or refrigerate for a few hours to let the flavors meld.

 

Substitutions:

For a lighter dressing, you can substitute mayonnaise with Greek yogurt or a plant-based mayonnaise product. This modification reduces the overall calorie and fat content while maintaining a creamy texture. Personally, I love Greek Yogurt, but some recipes are just better with mayonnaise, so I tend to look for the healthier option.

Ingredients
  

  • 1/3 cup mayonnaise substitute with Greek yogurt or plant-based mayonnaise
  • 3 Tbsp lemon juice
  • 1 1/2 tsp Dijon mustard
  • 1 shallot minced
  • 2 tsp fresh tarragon chopped
  • 1 tsp honey
  • 3/4 tsp salt
  • 10 oz Brussels sprouts sliced thin (about 4 cups)
  • 1 crunchy apple cored & sliced thin
  • 3 celery sticks finely chopped
  • 1/2 cup walnuts toasted & chopped
  • 1/2 cup seedless red grapes halved
  • 1/4 cup pomegranate seeds optional
