Better Light Green n’ Radish Omelette
Lighten up an omelette with arugula and radish shavings for a delicious, protein-rich, anytime-of-the-day option. If enjoying it at the end of your day, no need to add a carb, but enjoy with a glass of water. If having at the start or midday then you can enjoy with a starchy vegetable, grain, or side of fruit. - 1/4 cup arugula
- 1/4 cup radish shaved
- 2 organic pasture-raised eggs
- pinch pepper
- pinch sea salt
- Coat a cast iron skillet with your cooking oil and heat on low. Crack two eggs and add pepper. let cook until firm then fold in half. Place omelette on plate and top with arugula and radish shavings. Add pinch of sea salt. Enjoy!
