Baked Sweet Potato and Pepita Oat Crumble

Ingredients
  

  • 3 large pre-baked sweet potatoes
  • 1/2 cup raw pecans finely chopped
  • 1/2 cup roasted & salted pepitas roughly chopped
  • 1 cup rolled oats
  • 2 teaspoons cinnamon powder
  • 1/2 teaspoon nutmeg powder
  • 1/3 cup olive oil
  • 1/2 cup maple syrup
  • 2 teaspoons vanilla extract

Instructions
 

  • Preheat oven to 400 degrees F. Mix all ingredients (except for sweet potato) together in a medium sized bowl. Set aside.
  • Slice all sweet potatoes in half lengthwise and then in half again horizontally. Place them a lightly greased baking dish.
  • Coat potatoes with oat crumble mixture by sprinkling it all over the surface. Cover the baking dish with foil and bake for 15 minutes.
  • Remove from oven and allow to cool for five minutes. Enjoy with a drizzle of maple syrup!
