Apple Compote with Sweet & Salty Seed Crumble

- 1 tablespoon coconut oil
- 4 Granny Smith apples peeled, cored and roughly chopped
- ¼ teaspoon sea salt divided
- ½ cup water
- 2 tablespoons sunflower seeds
- 2 tablespoons pumpkin seeds
- 1 teaspoon sesame seeds
- 1 tablespoon maple syrup
- Dash of cinnamon
- Dash of ground ginger
- 1 teaspoon lemon zest
- 1 teaspoon lemon juice

- Heat coconut oil in a medium pot. Add apples and a dash of salt. Sauté, 2-3 minutes until fragrant. Add water and simmer until soft and tender, stirring occasionally, about 12-15 minutes.
- Meanwhile, heat a small sauté pan over medium high heat. Add the sunflower and pumpkin seeds and toast, 2-3 minutes, tossing occasionally until fragrant and golden. Add the sesame seeds, maple syrup, cinnamon, ginger, remaining salt and lemon zest. Stir to combine and remove from heat.
- Stir lemon juice into compote and divide amongst 4 bowls. Sprinkle with seed topping.
