4Granny Smith applespeeled, cored and roughly chopped
¼teaspoonsea saltdivided
½cupwater
2tablespoonssunflower seeds
2tablespoonspumpkin seeds
1teaspoonsesame seeds
1tablespoonmaple syrup
Dash of cinnamon
Dash of ground ginger

Directions
Heat coconut oil in a medium pot. Add apples and a dash of salt. Sauté, 2-3 minutes until fragrant. Add water and simmer until soft and tender, stirring occasionally, about 12-15 minutes.
Meanwhile, heat a small sauté pan over medium high heat. Add the sunflower and pumpkin seeds and toast, 2-3 minutes, tossing occasionally until fragrant and golden. Add the sesame seeds, maple syrup, cinnamon, ginger, remaining salt and lemon zest. Stir to combine and remove from heat.
Stir lemon juice into compote and divide amongst 4 bowls. Sprinkle with seed topping.
