Equipment

  • 1 mixing bowl
  • 1 spoon
  • 1 cookie sheet
  • 1/4 cup measuring cup
  • 1 liquid measuring cup

Ingredients
  

  •  1.5 scoops chickpea protein powder Simply Fuel
  • 1-2 tbsp maple syrup or raw organic honey can blend both; adjust for desired sweetness
  • 1 tsp cinnamon
  • 4-6 oz unsweetened non-dairy milk oat for sweetness/creaminess, hemp for less sugar, cashew for middle of the two; adjust for desired consistency
  • 1/4 cup nut butter creamy or crunchy depends on desired texture; we used cashew or almond; can blend
  • 2 tbsp cacao nibs or chocolate chips we like Good Sam chocolate chips
  • 1 pinch sea salt
  • 1 tbsp non-dairy butter we like Miyokos; only need if baking, will grease sheet with it

Instructions
 

  • Place milk first and fold in all other ingredients. Use ONLY the first scoop of protein powder and the 4 oz of liquid then add additional to get a cookie dough texture. Do not add non-dairy butter.
  • Gently mix together until desired consistency. Should be able to roll into balls, not too sticky.
  • Roll into balls.
  • Freeze, store refrigerated or bake
  • To bake, spread butter onto baking sheet in toaster or oven and bake for 25-30 minutes at 325F (preheat oven). They will be darker on outside and mushy inside; flatten balls before baking if you prefer a less soft inside.

Notes

This is quickly a household favorite as a base or by itself. You can add so many different ingredients or roll in spices, coconut flakes, match or cacao/cocoa powder etc.
