Chicken Caesar Salad

- 1 boneless skinless chicken breast
- Juice of 1/2 lemon
- 3 tablespoons olive oil
- 1/4 teaspoon salt divided
- 3 tablespoons organic mayo or vegan mayonnaise
- 1 tablespoon white miso
- ½ teaspoon Dijon mustard
- 1 tablespoon capers drained and finely chopped
- 2 tablespoons lemon juice
- Pinch of black pepper
- 1/3 cup extra virgin olive oil
- 1 head romaine lettuce cored and chopped into bite-sized pieces
- 1/4 cup whole grain croutons or hemp seeds
- 1/4 cup shredded Parmesan cheese

- Place chicken breast in a zip lock bag with lemon juice, olive oil and salt. Let sit in refrigerator for 20-30 minutes.
- Heat grill or a grill pan on stovetop to medium-high heat. Remove chicken from marinade and grill, about 5-6 minutes. Flip and grill another 5-6 minutes until thoroughly cooked. Set aside to come to room temp.
- Meanwhile, in a small mixing bowl, whisk together the mayo or vegan mayonnaise, miso, mustard, capers, lemon juice and black pepper. Slowly pour in the olive oil and whisk until emulsified.
- Cut the chicken into bite-sized pieces and add to a large mixing bowl with lettuce, croutons and dressing. Toss to coat and sprinkle with Parmesan.
