The Better Nutrition Trail Mix
by Ashley Koff RD
Makes one serving.
- 3/4 cup organic fiber-rich cereal (>3g per serving)
- 1/4 cup organic nuts, raw, mixed
- 1/4 cup organic pumpkin & sunflower seeds, raw
- 2 Tbsp hemp seeds
- 1 Tbsp unsweetened coconut shreds
- 2 Tbsp raw cacao nibs
In a large glass bowl, toss all ingredients together and place them in a glass or stainless steel container so that you can have them ready for a snack at home or to go. You can even use them as a topping on salad greens! If you don’t like or can’t find cacao nibs you can substitute them for dark chocolate. Take abut one ounce of dark chocolate as chips or smash a bar into bits. Just make sure your dark chocolate is greater than sixty-five percent cacao – so read the label. Skip dried fruit or swop your cereal for two tablespoons of dried fruit. It’s all about choices and what you find delicious!
