  • 3 large zucchini
  • 1 small onion
  • 2 egg whites
  • ½ cups bread crumbs can use gluten-free cereal or gluten-free bread crumbs
  • ½ cups chopped cilantro or Italian parsley
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
  • 1.5 tablespoons cooking oil

  • In a medium bowl grate the zucchini and onion together. Squeeze out as much liquid as possible over a strainer.
  • Add the egg whites, bread crumbs, herbs, salt and pepper and combine.
  • Form the fritters into small patties.In a large skillet heat the cooking oil until thin and sizzling hot. Add the fritters and lower the heat to medium. Cook for 3 minutes on each side until golden brown.
