½cupschopped cilantro or Italian parsley

In a medium bowl grate the zucchini and onion together. Squeeze out as much liquid as possible over a strainer.
Add the egg whites, bread crumbs, herbs, salt and pepper and combine.
Form the fritters into small patties.In a large skillet heat the cooking oil until thin and sizzling hot. Add the fritters and lower the heat to medium. Cook for 3 minutes on each side until golden brown.
