A Better Veggie Cauliflower Crust Pizza

Crust:

  • One large head fresh cauliflower
  • 2 large eggs
  • 2 cups mozzarella cheese shredded
  • Olive oil or cooking spray

Toppings:

  • 1/2 cup pizza sauce
  • 1 cup mushrooms. sliced
  • 1 red onion. sliced

Optional:

  • add other vegetables like broccoli or greens
  • 2 chicken or salmon sausages cooked
  • Spices: garlic crushed red pepper, etc.

Instructions
 

Directions:

  • Preheat oven to 425F.
  • Oil/spray a cookie sheet .
  • Remove cauliflower leaves and cut into chunks.
  • Place chunks in blender that can “rice” or shred it finely into a bowl.
  • Microwave the cauliflower in a bowl – do not cover – for 8 minutes.
  • In a cast iron pan – sauté vegetables (onions, mushrooms etc); at the same time, if you are cooking sausages, slice them thinly (like pepperoni) .
  • In a large bowl, whisk two eggs and 1 1/2 cup of cheese together.
  • Remove cauliflower from microwave and let cool.
  • Add cauliflower to bowl with eggs and cheese, stir until completely mixed.
  • Spread cauliflower egg cheese mixture onto greased cookie sheet and bake for 12-15 minutes until the edges are golden brown. Depending on your oven, you may want to rotate the pizza crust after 10 minutes.
  • Remove crust and spread pizza sauce, then veggies and/or meat then top with cheese and spices.
  • Put back into the oven and bake for 5-10 minutes until cheese melts.
  • Remove from oven, let cool for 3-5 minutes, slice and serve.
