Preheat oven to 425F.
Oil/spray a cookie sheet .
Remove cauliflower leaves and cut into chunks.
Place chunks in blender that can “rice” or shred it finely into a bowl.
Microwave the cauliflower in a bowl – do not cover – for 8 minutes.
In a cast iron pan – sauté vegetables (onions, mushrooms etc); at the same time, if you are cooking sausages, slice them thinly (like pepperoni) .
In a large bowl, whisk two eggs and 1 1/2 cup of cheese together.
Remove cauliflower from microwave and let cool.
Add cauliflower to bowl with eggs and cheese, stir until completely mixed.
Spread cauliflower egg cheese mixture onto greased cookie sheet and bake for 12-15 minutes until the edges are golden brown. Depending on your oven, you may want to rotate the pizza crust after 10 minutes.
Remove crust and spread pizza sauce, then veggies and/or meat then top with cheese and spices.
Put back into the oven and bake for 5-10 minutes until cheese melts.
Remove from oven, let cool for 3-5 minutes, slice and serve.
