Better Broccoli Quinoa Risotto

This warming better broccoli quinoa risotto provides plant-based carbs and proteins, and adds the detox support from broccoli (glucoraphanin) and garlic. Super easy to make, this can be served room temp over greens or warm topped with sautéed greens and mushrooms.   • 4 cloves garlic diced
  • 1 cup multicolor quinoa dry
  • 2 cups broccoli soup
  • 2 Tbsp organic canola oil
  • Optional: 2 Tbsp Parmesan shredded

Instructions
 

Directions

  • In a 1 quart pot, add oil and heat at medium.
  • Place diced garlic. Allow to get crispy, add quinoa and stir.
  • Stir in broccoli soup and bring to a boil. Reduce to simmer and cover.
  • Cook for fifteen minutes stirring occasionally to prevent anything sticking to the bottom. Remove and plate.
  • Sprinkle Parmesan on and serve.
