  • 3/4 cup whole wheat flour
  • 3/4 cup spelt flour
  • 1-1/2 teaspoons baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon sea salt
  • 2 large ripe bananas, mashed
  • 1 egg beaten
  • 1/3 cup maple syrup
  • 1 teaspoon vanilla
  • 2 tablespoons melted coconut oil
  • 1 cup chopped walnuts

Directions

  • Preheat oven to 350 degrees and grease and flour a 9” loaf pan. In a large mixing bowl, whisk together flours, baking powder, cinnamon and sea salt.
  • In a separate bowl, combine mashed bananas, egg, maple syrup, vanilla and melted coconut oil. Pour wet ingredients into dry ingredients and stir until just combined. Fold in walnuts.
  • Pour batter into prepared baking dish and bake, about 45 minutes, until lightly browned and when a knife inserted into the center comes out clean. Let cool and serve.
