Vegan Chocolate Pumpkin Pie

Crust:
- 3 cups Qi’a Coconut Chia Superflakes
- 1 tbsp cacao
- 4 tbsp coconut oil or vegan butter like Earth Balance organic spread melted
Filling:
- 1/4 cup coconut milk
- 1.5 tbsp cornstarch
- 1.5 cups pumpkin puree
- 1/4 cup sugar
- 1.5 tsp pumpkin pie spice
- 2/3 cup dark chocolate bar Camino Dark Chocolate – broken into small chunks

- Crush Superflakes in blender until fine, adding the cacao at the end just to mix it in. Mix with coconut oil. Press into pie plate and chill.
- To make filling, in a saucepan over medium heat, add milk and starch and mix well. Mix in pumpkin, sugar and spices and cook for 5 minutes.
- Remove from heat and add dark chocolate and let sit for 2 minutes. Mix in dark chocolate is melted and the mixture is smooth. Taste and adjust sweetness if needed.
- Pour in crust. Chill 2 hours and serve. Serve with whipped coconut cream or dust with icing sugar.
