Vegan Chocolate Pumpkin Pie

Ingredients
Crust:
- 3 cups Qi’a Coconut Chia Superflakes
- 1 tbsp cacao
- 4 tbsp coconut oil or vegan butter like Earth Balance organic spread melted
Filling:
- 1/4 cup coconut milk
- 1.5 tbsp cornstarch
- 1.5 cups pumpkin puree
- 1/4 cup sugar
- 1.5 tsp pumpkin pie spice
- 2/3 cup dark chocolate bar Camino Dark Chocolate – broken into small chunks
Directions
Crush Superflakes in blender until fine, adding the cacao at the end just to mix it in. Mix with coconut oil. Press into pie plate and chill.
To make filling, in a saucepan over medium heat, add milk and starch and mix well. Mix in pumpkin, sugar and spices and cook for 5 minutes.
Remove from heat and add dark chocolate and let sit for 2 minutes. Mix in dark chocolate is melted and the mixture is smooth. Taste and adjust sweetness if needed.
Pour in crust. Chill 2 hours and serve. Serve with whipped coconut cream or dust with icing sugar.
