Vegan Caesar Salad with Garlic Croutons

  • 2 slices eureka!® Top Seed® Organic Bread cut into ½” cubes
  • 3 tablespoons organic Vegenaise
  • 1 tablespoon white miso
  • ½ teaspoon Dijon mustard
  • 1 tablespoon capers drained and finely chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon dulse flakes* optional but recommended
  • Pinch of black pepper
  • 1/3 cup + 2 teaspoons extra virgin olive oil divided
  • 1 teaspoon finely minced garlic
  • Pinch of sea salt
  • 2 romaine lettuce hearts chopped into bite-sized pieces

Directions

  • Preheat broiler on high setting. In a high-speed blender, combine Vegenaise, miso, mustard, capers, lemon juice, dulse flakes and pepper. Blend until smooth and emulsified, about 10 seconds. With motor running, slowly pour in 1/3 cup olive oil. Set aside.
  • In a small bowl, toss bread cubes with remaining olive oil and a pinch of sea salt. Spread out on a baking sheet and place on the lowest setting under the broiler for 1 minute. Toss and broil for another minute or until cubes are lightly browned, fragrant and crispy. Set aside to cool slightly.
  • In a large bowl toss the lettuce with dressing and ¾ of the croutons. Sprinkle remaining croutons over top and serve.

Notes

*Dulse flakes are a type of dried seaweed which add delicious flavor that some refer to as “umami”. You can substitute with other dried seaweeds like seaweed snacks or take a sheet of seaweed and crumble it. Courtesy of Eureka Organic Bread
