Spiced Just Right Horchata

A refreshing cinnamon flavored dairy-free beverage. This traditional spiced Mexican drink is made with a base of rice and almonds and served chilled.   • ½ cup long grain white rice soaked for 3 hours
  • 2 tbsp blanched almonds soaked for 3 hours
  • 1/3 cup + 2 tbsp granulated sugar
  • ¼ cup soy milk
  • ½ tsp cinnamon
  • ¼ tsp vanilla
  • Pinch sea salt
  • Water

Directions

  • In a jar with a lid, combine rice, almonds, and enough water to cover. Let sit for 3 hours at room temperature.
  • Combine soaked rice and almonds (including water), sugar, soy milk, cinnamon, vanilla, sea salt and enough water to bring the total volume up to 1 litre.
  • Blend on high until smooth. Strain if desired.
  • Serve over ice.
