  • 2 3-4 oz. pieces wild salmon
  • 1 Tbsp. dijon mustard
  • 2 Tbsp. breadcrumbs gluten-free option
  • 2/3 cup pistachios shelled
  • 1 clove garlic
  • 1 shallot minced
  • salt and pepper to taste
  • 4 cups baby spinach raw
  • 2 medium apples cored sliced or cubed
  • 2 Tbsp. goat cheese or hemp seeds

Directions

  • Preheat oven to 425 degrees. In a food processor chop pistachios. Mix with breadcrumbs, garlic and shallots and place on a large plate. Season salmon with salt and pepper. Spread mustard on the fillet, covering it entirely. Place fillet on plate with nut mixture, pressing salmon into mixture so that it is fully covered with nuts. Place salmon on baking sheet and bake for ~10-15 minutes until fish is cooked through. While salmon is baking combine spinach, apple and goat cheese. Drizzle lightly with olive oil and balsamic vinegar. Top salad with salmon and serve.
