Chocolate Avocado Bread Pudding

  • 8 slices eureka!® Saaa-Wheat! ® Organic Bread torn into bite-sized pieces
  • ½ avocado peeled and pit removed
  • ½ cup unsweetened cocoa powder
  • 1-1/4 cup unsweetened almond milk
  • 2 eggs beaten
  • ¼ cup + 2 tablespoons maple syrup
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • Pinch of sea salt

Garnish:

  • Raw cacao nibs
  • Shredded coconut

Instructions
 

Directions

  • Combine avocado, cocoa, almond milk, eggs, maple syrup, vanilla, cinnamon and sea salt in a high-speed blender. Blend until smooth and creamy, about 15-20 seconds.
  • Preheat oven to 350 degrees. Place bread pieces into a 9”x9” baking dish. Pour the chocolate mixture over top and gently stir to coat. Bake for 35 minutes, or until top is crisp and a knife inserted into center comes out clean.
  • Slice into squares. Garnish with cacao nibs or shredded coconut, if desired, and serve.
