Baked Tomato and Pesto Salmon

Salmon + BNP's deliciously doable Hemp Pesto
This easy, delicious main dish is a winner in our book because it combines loads of heart healthy fats including wild salmon, olive oil and hemp seeds!
The gorgeous red and green colors mean a bounty of vitamins, minerals and antioxidants to support whole body nutrition (lycopene, found abundantly in tomatoes (ie that red pigment!), may improve cardiovascular health by lowering cholesterol levels, reducing inflammation, and protecting blood vessels from damage).

Ingredients
  

  • 1 lb Wilde Salmon Filet with skin on
  • 2 Vine or heirloom tomatoes sliced
  • Homemade Pesto (linked below)
  • 1 Tbs Olive Oil
  • Salt & pepper to taste

Instructions
 

  • Line a baking sheet with parchment paper.
  • Place salmon, skin side down on the parchment paper and coat the top with a thick layer of pesto*.
  • Cover the pesto with tomato slices, putting them close together.
  • Drizzle with olive oil, sprinkle a little salt and pepper.
  • Bake in 400 degree oven for about 15mins or until center of salmon is cooked through.
