THAI CHICKEN LETTUCE WRAPS WITH CUCUMBER SALAD

Who needs take out when cooking at home is this delicious and a hundred times healthier?! We love mixing up the monotony of dinner with a fun hand held where the ingredients are passed around at the table.
This is a go-to when we're in a rut with flavors, the tangy, cold, crisp cucumbers cut through the flavorful chicken and the bits of mint, basil and cilantro offer a delightful burst of flavor.
This recipe hits your protein needs with an abundance of water too (thanks to cucumber and lettuce 'cups') along with the diversity of nutrients in the herbs. You'll be asking to stay in more often!

Ingredients
  

Cucumber Salad:

  • 1/2 English cucumber thinly sliced
  • 1/4 Small red onion thinly sliced
  • Rice Vinegar to taste
  • Salt to taste

Chicken Lettuce Wraps

  • 2 tsp Avocado oil
  • 1lb Ground chicken
  • 6 cloves Garlic minced
  • 2 Tbs Low sodium Tamari/soy sauce or coconut aminos
  • 1 Tbs Fish sauce (only anchovies and salt)
  • 2 tsp Coconut sugar or brown cane sugar
  • 1 cup Fresh basil leaves
  • 1/2 cup Fresh cilantro leaves
  • 1/2 cup Fresh mint leaves

For serving

  • 1 head Lettuce core removed and cut in half
  • Short grain brown rice or cauli rice
  • Cucumber Salad (recipe above)
  • Hot sauce

Instructions
 

Cucumber Salad:

  • Add the cucumber and onions into a glass bowl, sprinkle with salt and toss to coat. Add a tablespoon or two of the rice vinegar and mix well- allow to sit and 'quick pickle'. Taste and adjust vinegar/salt to your liking then refrigerate until serving.

Chicken Lettuce Wraps:

  • In a large skillet over medium high heat, add the avocado oil and the chicken, breaking it up into crumbles.
  • When the chicken is almost done cooking, add the garlic, tamari, fish sauce and coconut sugar.
  • Cook until the chicken is browned and cooked through, then set aside.
  • Chop the herbs- basil, cilantro and mint then combine into a separate bowl and toss until evenly distributed.

To serve, lay a piece of lettuce on your plate, top with rice, some chicken, herbs and finally a few 'pickles' and hot sauce if desired.

    Notes

    *TIP: Throw any left overs (good luck with that!) in a bowl the next day for a tasty lunch.
