Cucumber Avocado Salad

With this vibrant medley of nutrient-rich ingredients, these fresh foods combined are not only delicious but detoxifying too!

Ingredients
  

  • 2 medium cucumbers sliced or diced
  • 2 ripe avocados peeled, pitted, and chopped into cubes
  • 2 Tbsp fresh cilantro leaves chopped
  • 3 Tbsp fresh parsley leaves chopped
  • 3 Tbs of fresh chives or red onion finely sliced
  • 1  fresh garlic clove finely grated or minced
  • 2 small fresh limes zest of 1, juice of both
  • 1 Tbsp  high-quality extra-virgin olive oil
  • Sea salt and fresh ground pepper to taste

Instructions
 

  • Combine all ingredients into a bowl, stir well, and adjust seasoning/herbs to taste, enjoy immediately.

    *Keep in mind non-starchy veggies are unlimited, so cucumber, herbs etc don't count

Notes

Tip: Mint is also delicious in place of the cilantro/parsley! Add in a can of rinsed/drained garbanzo beans or serve along with some chicken or white fish for an easy balanced meal idea.
