Ingredients
For the buffalo cauliflower:
1cupnon-dairy creamer
2/3cuphot sauce
3/4cupvegan butter
1/4tspcayenne pepper
1/8tspgarlic powder
1tspchili flakes
1/2lemonjuice
1pinchsalt + pepper to taste
1fullhead of cauliflower
1/2cupchopped lettucefor topping
1bagtortillas for tacos
1/2cupflouryour choice
6Tbsphemp seeds
For the avocado sauce:
1mediumavocado
1/2cupparsley
1cupcilantro
1lemon
4garlic cloves
3-4tspolive oil
Instructions
Start by making your buffalo sauce by adding hot sauce and vegan butter to a saucepan and melt down. Add cayenne, garlic powder, chile flakes, lime juice and salt and pepper to taste. While that’s melting and combining together, take 1 head of cauliflower and tear or cut apart the florets. Marinate in 1 cup of a dairy free creamer, like Califia Farms Better Half. Although the creamer has a tad bit of sweetness, it adds a lot of flavor to the buffalo cauliflower! Marinate for 30mins-1hr.
Slice your lettuce and get your tortillas ready for charring.
In the meantime, make your avocado sauce by placing 1 avocado, 1/2 cup parsley, 1/2 cup cilantro, 1 lemon juice, salt, pepper + 4 garlic cloves and mix in a blender until a creamy avocado sauce is formed. Add olive oil + more salt and pepper to taste.
Toss marinated cauliflower in flour. Place in the air fryer or roast in the oven at 400 degrees until crispy, about 10-12 minutes. Take your fried cauliflower and mix in with the buffalo sauce. Top it off with hemp seeds. Serve alongside with your tortillas, lettuce, and the avocado sauce. Eat by itself or make tacos!
