Preheat oven to 425 degrees and set up an ice bath in a large mixing bowl.
Bring a large pot of salted water to a boil. Add florets and blanche until just tender, about 2-3 minutes. Shock in ice bath and drain florets. Pat dry.
Dip the cauliflower in egg whites and toss in breadcrumbs. Place on a baking sheet. Bake cauliflower until crisp and golden brown, about 20 minutes.
Meanwhile, whisk together coconut oil and chili sauce. Right before serving, toss cauliflower in sauce. Serve immediately.
