What comes to mind when you hear 'granola'? We bet its oats, nuts, seeds, maybe a little sweetener, right? We think so too and that's why this granola bar recipe packs all that, yet unlike so many store bought options, has a better protein to carbohydrate ratio (we're always talking about balance here at BNP!).No weird ingredients or preservatives in these delicious bars, just a variety of nutrient-dense, whole nutrition foods your body can recognize and benefit from. Better satiety, better blood sugars and resulting energy! Buying the ingredients in bulk and storing in glass containers is the way to go here if you don't already have these pantry items. 3/4cupgrass-fed organic Vanilla Whey Protein Powder(sub: plant protein powder, but look for one with <5g carb per serving)
2tspCinnamon
1/2tspBaking soda
1/2tspSea Salt
1 TbsPure vanilla extract
2Eggs
1/3cupUnsweetened applesauce
1/4cupAlmond, Cashew or Peanut Butter
1/3cupRaw Honey
Instructions
Preheat the oven to 325 degrees and line a 9x13 pan with parchment paper.
Mix flax seed meal and water in a small bowl, set aside to gel.
In a large bowl add all the dry ingredients and mix with a spatula. Add all wet ingredients and mix again until completely incorporated.
Transfer the batter to the prepared pan and smooth out.
Bake for 20 minutes or until set and golden brown. Allow to cool completely, cut into bars and store on the counter for a couple days or for longer in the refrigerator.
