1head romaine lettucecored and chopped into bite-sized pieces
1/4cupwhole grain croutons or hemp seeds
1/4cupshredded Parmesan cheese

Place chicken breast in a zip lock bag with lemon juice, olive oil and salt. Let sit in refrigerator for 20-30 minutes.
Heat grill or a grill pan on stovetop to medium-high heat. Remove chicken from marinade and grill, about 5-6 minutes. Flip and grill another 5-6 minutes until thoroughly cooked. Set aside to come to room temp.
Meanwhile, in a small mixing bowl, whisk together the mayo or vegan mayonnaise, miso, mustard, capers, lemon juice and black pepper. Slowly pour in the olive oil and whisk until emulsified.
Cut the chicken into bite-sized pieces and add to a large mixing bowl with lettuce, croutons and dressing. Toss to coat and sprinkle with Parmesan.
