2tinssardines (preferably with bones and in olive oil)
1-2Tbsarrow root powder
1 tsponion powder
1 tspgarlic powder
1tsp Italian seasoning
Instructions
Open the sardine tin, drain oil and reserve for cooking.Add sardines to a bowl large enough for mixing.Add arrowroot and seasonings to sardines and mix well, breaking up chunks of fish and creating a somewhat smooth mixture.Warm a large sauté pan on medium-low heat. Add reserved oil to coat the bottom of the pan.User your hands to form small patties from the mixture and drop them into the pan. Cook 5-10 minutes untilcrispy and golden brown. Flip the patties and cook on the other side.When sufficiently crispy, place on a plate with a paper towel and allow to cool a few minutes before serving. Enjoy sardines alone as a delicious snack or on top of a green salad.
