Better Light Greens 'N Radish Omelette

Lighten up an omelette with arugula and radish shavings for a delicious, protein-rich, detoxification enabling anytime-of-the-day option. Pair with a colorful carb like blackberries or sweet potato for more plant rainbow power. If enjoying it at the end of your day, no need to add a carb, but enjoy with a glass of water. Ingredients
  

  • 1/4 cup arugula
  • 1/4 cup radish shaved
  • 2 organic pasture-raised eggs
  • pinch pepper
  • pinch sea salt
  • 1 tbsp olive oil extra virgin
  • 1 tsp lemon juice

Instructions
 

  • Coat a cast iron skillet with your cooking oil and heat on low. Crack two eggs and add pepper. let cook until firm then fold in half. Place omelette on plate and top with arugula and radish shavings. Drizzle with olive oil and lemon. Add pinch of sea salt. Enjoy!
