Mixed Berry & Bran Fruit Crisp

Ingredients
  

For the crisp:

  • 3 cups 750ml frozen mixed berries (I used blueberries and raspberries)
  • 1 tbsp 15ml cornstarch
  • 3 tbsp 45ml sugar ½ cup (125ml) SmartBran Cereal
  • ¼ cup 60ml flour ½ cup (125ml) Old Fashioned Oats
  • cup 80ml melted vegan butter

For the coconut whip:

  • 14 fl. oz 414 ml can of high quality coconut cream, chilled overnight
  • 2 tbsp berry sugar
  • Flaked coconut to serve

Instructions
 

For the crisp:

  • Preheat oven to 350°F. Line a loaf pan with parchment paper.
  • Layer berries into the pan. Sprinkle evenly with sugar and cornstarch.
  • In a bowl, combine SmartBran Cereal, sugar, flours, old fashioned oats, and vegan butter. Stir well until the mixture sticks together a little bit. Top the previously sprinkled berries evenly with the crumble mixture.
  • Bake for 40 minutes or until the topping appears lightly golden-brown.
  • Serve with coconut whip (directions below) and flaked coconut.

For the coconut whip:

  • Open chilled coconut cream and scoop out the thickest portion. Discard or save the remaining coconut water for smoothies.
  • Beat the thick coconut cream with 2 tbsp berry sugar. Beat on high speed until coconut cream is thick and airy.
  • Chill until needed.
