Banana “Pancakes” with Pomegranate & Cacao Sauce

    For the pancakes:

    • 1 banana
    • 2 eggs
    • ¼ tsp. vanilla bean powder
    • 1/8 tsp. aluminum-free baking powder
    • pinch of sea salt
    • coconut oil
    • toppings per serving: nuts & seeds (macadamia (10), hazelnuts, cashews (18), Brazil nuts (5), walnut, pecan halves (10), 3 Tbsp. shredded coconut)

    For the cacao sauce:

    • ¼ cup coconut oil
    • 2 heaping Tbsp. cacao powder
    • 2 Tbsp. maple syrup
    • ¼ tsp. vanilla bean powder

    Directions

      For the pancakes:

      • Blend banana, eggs, vanilla bean powder, baking powder, sea salt in a blender or food processor.
      • Warm a skillet greased with coconut oil over medium heat.
      • Pour a silver dollar sized amount into pan (or larger sized if you prefer bigger pancakes).
      • Cook about 30 seconds on each side or until the bottoms look light brown. Serve with topping and a light drizzle of cacao sauce to taste.

      For the cacao sauce:

      • Whisk ingredients together in bowl and pour on pancakes when ready.
